Taralli are flaky, ring-shaped crackers popular throughout the southern Italian region of Puglia. These taralli get their rich brown color from Puglia’s famous toasted wheat, or grano arso, known for its distinctly smoky and nutty characterGrano arso’s origins are rooted in the region’s ancient history of peasant cuisine, when wealthy landowners allowed the poor residents to pick over remnants of burned wheat fields to make their own flour. Once a sign of difficult times, grano arso has since become a proud symbol of resilience.

Taralli are an essential component of an aperitivo (a drink and a snack) in the south of Italy. Set out a bowl of Toasted Wheat Taralli alongside sliced salumi, Italian olivespickled vegetables and your favorite bottle of wine.
